You can opt for bi-axially oriented polypropylene. It has excellent transparency and gloss. Another clear resin is polyethylene terephthalate, otherwise known as PET. Hope this helps.
I would suggest any form of FDA-approved polypropylene, polyethylene or any other FDA-approved food grade resin. My only experience with anything like this is in obtaining a wood glue suitable for use in gluing hardwood cutting boards.
